Then I opened the cocoAspell pane in System Preferences. You may have to hit the box in front of the Danish to get a check-mark on the list in there. Afterwards in Apple Mail or Adium I just right-click any chunk of text and use the <strong>Spelling</strong> submenu to change language as needed.
