If you are using OS X 10.5 Leopard, there is a Danish dictionary built-in.

cocoaspell.leuski.net is still up and running. I guess you will need to go there.

I downloaded the cocoAspell 2.0.4 for Intel at the frontpage of cocoaspell.leuski.net and then I grabbed the Danish dictionary from here ftp.gnu.org/gnu/aspell/dict/da/aspell5-da-1.4.42-1.tar.bz2

I unpacked aspell5-da-1.4.42-1.tar.bz2 and moved the dictionary to /Library/Application Support/cocoAspell/aspell5-da-1.4.42-1.

Then I opened the cocoAspell pane in System Preferences. You may have to hit the box in front of the Danish to get a check-mark on the list in there.

Afterwards in Apple Mail or Adium I just right-click any chunk of text and use the Spelling submenu to change language as needed.
